Jamaican-Style Beef Patties

The Jamaicans take their beef patties very seriously indeed. And, when questioned, everyone will have their favorite place from which to buy this beloved snack. This recipe will allow you to make them at home and see just why they have become such a treasured staple.

Jamaican-Style Beef Patties Recipe

(Makes About 8-12 Patties)

Ingredients​

​

For the Dough:

  • 3 Cups All-Purpose Flour

  • 1 Teaspoon Salt

  • 1 Teaspoon Baking Powder

  • 1 Teaspoon Garam Masala

  • 1 Teaspoon Turmeric

  • 5 Tablespoons Unsalted Butter (Very Cold in Cubes)

  • 1 Cup Water (Ice Cold)

For the Filling:

  • 2 lbs. Ground Beef

  • 3 Tablespoons Olive Oil

  • 1 Large White Onion (Finely Chopped)

  • 1 Teaspoon Salt

  • 1 Teaspoon Ground Black Pepper

  • 2 Cloves Garlic (Finely Chopped)

  • 2 Scotch Bonnet Peppers (Deseeded and Minced) (You can use habanero as an alternative)

  • 1 Teaspoon Ground Allspice

  • 1 Teaspoon Jamaican Curry Powder (You can use Garam Masala as an alternative)
  • 1 Teaspoon Worcestershire Sauce

  • 4 Tomatoes (De-seeded and Chopped)

  • ½ Cup Beef Stock

  • ½ Cup Fresh Parsley (Chopped)

For the Egg Wash:

  • 2 Eggs

  • ½ Cup Milk

Instructions

​

For the Dough:

  1. Blend together all of the dry ingredients.

  2. Add in the cubed butter, and blend using your hands to make a texture resembling rough bread crumbs.

  3. Gradually add the water and combine until it makes a firm dough.

  4. Turn onto a floured board and massage the dough for 3 minutes.

  5. Wrap in plastic wrap and allow to sit for at least 30 minutes.

For the Filling:

  1. Sear off the ground beef in a medium hot skillet.

  2. Remove from the pan and reserve.

  3. Add the olive oil to the same pan and bring back to a medium heat.

  4. Add the onions.

  5. Season with salt and pepper, and cook for 3 to 4 minutes.

  6. Add the garlic and cook for two minutes.

  7. Add the scotch bonnet peppers and cook for 2 minutes.

  8. Add the all spice and curry powder and cook for 2 minutes.

  9. Add the Worcestershire sauce.

  10. Add the tomatoes and the beef stock.

  11. Return the ground beef to the pan.

  12. Cook until the liquid is almost all evaporated.

  13. Allow to cool. Check for seasoning and add salt as needed.

  14. Add the chopped parsley.

To Prepare the Patties:

  1. Roll the pastry dough out until it is about 1/8th Inch thick.

  2. Using a cutter or a bowl cut rounds from the pastry about 3 inches in diameter.

  3. Spoon an amount of beef filling into the center of each circle.

  4. Fold over the pastry to form a pasty.

  5. Crimp the edges closed with the back of a fork.

  6. Place on a baking sheet lined with parchment paper.

  7. Combine the eggs and milk to form a wash, and brush over each one making sure the entire top surface is coated.

  8. Pre-heat your oven to 350 degrees Fahrenheit, and cook the patties for 20 minutes or until the dough is crisp. They will be beautifully golden because of the addition of the turmeric.
