Balkan Sausage (Ćevapčići or Ćevapi)
These very simple kebabs -- popular in the Balkans, which include Bosnia & Herzegovina, Serbia, Croatia, Slovenia and Montenegro -- combine three meats and just a few simple spices, and are perfect for cooking on the grill, but can just as easily be cooked inside on a griddle. Serve with a salad of tomatoes & cucumber, flatbread and a rich whole milk yogurt, and it’s the perfect supper.
Balkan Sausage (Ćevapčići or Ćevapi) Recipe
(Serves about 4-6)
Ingredients

1½ lbs Ground Beef

1½ lbs Ground Lamb

1½ lbs Ground Pork
-
2 Cloves Garlic (Finely Minced)

1 Onion (Grated)

1 Tsp Paprika

1 Tsp Red Chili Powder

1 Tsp Salt
-
1 Tsp Pepper
-
Vegetable Oil for Brushing Before Grilling

Flatbread (for serving)
Instructions

Combine all the ingredients in a mixing bowl.

Cover with plastic wrap and chill for one hour.

Remove from the fridge and allow to come back to temperature.

Form the meat into sausages about 3-4 inches long.

Brush with oil.

Grill each sausage until cooked.

Serve with flatbread and your choice of a salad (optional).
