Green Beans, Lemon & Capers Recipe

(Serves 4)

Ingredients

1 lb Green Beans (Stalks Removed)

½ Lemon (Juice)

1 Shallot (Diced)
-
¼ Cup Capers
-
2 Cloves Garlic (Diced)
-
½ Cup White Wine
-
¼ Stick Cold Butter (Diced in Small Cubes)
-
Extra Virgin Olive Oil
-
½ Cup Grated Parmesan Cheese
-
Salt
-
Pepper
Instructions​

Add the olive oil to a pan over medium heat.

Add the shallots and cook for two minutes.

Add the garlic and cook for two minutes.

Add the white wine and cook until reduced by half.

Add the butter in batches of two or three cubes, and stir until they are combined with the sauce.

Add the green beans, cover the pan, and cook for three to four minutes.

Remove the cover, and add the capers and lemon juice.
-
Combine well and allow to cook until the beans are done, but still crisp.

Transfer to a serving dish and sprinkle the top with Parmesan cheese.
