(Turkish-Style Scrambled Eggs)
Here is a dish that I just loved on our travels through Turkey. It has many varieties, but the key ingredients are eggs, green peppers, and tomatoes. My version is similar to one we had in our lovely hotel in Bursa, where we were given the addition of cumin and chili. Add to these the fantastic full Turkish breakfast of olives, cheeses, breads, sausages, hard boiled eggs, fruits, tomatoes, and cucumbers, as well as jams and butter. And, we were thankful, we would not eat again until dinner time. Do give it a try.
Menemen (Turkish-Style Scrambled Eggs) Recipe

(Serves About 2-4)

Ingredients​

2 Tbsp Olive Oil (Not Extra Virgin)

1 Tbsp Unsalted Butter

½ White Onion (Diced)
-
3 Garlic Cloves (Diced)

1 Tsp Kosher Salt
-
1 Tsp Ground Black Pepper
-
1 Tsp Cumin
-
1 Tsp Chili Powder
-
1Tsp Red Pepper Flakes
-
1 Green Bell Pepper (Diced)
-
4 Tomatoes (Diced with Seeds Removed)

5 Eggs (Whisked)

½ Ball Mozzarella Cheese (Torn into Pieces)

Instructions​​

Heat the oil up in a frying pan on medium heat.

Add the butter, and wait until the butter begins to foam.

Add the white onions, and allow to cook for 3-4 minutes.

Add the garlic, and allow to cook for 2-3 minutes.

Add the salt, pepper, cumin, chili powder and red pepper flakes, and stir to combine with the onions and garlic. Allow to cook for 2-3 minutes.

Mix in the green peppers.

Mix in the diced tomatoes.

Cover and leave for 3-4 minutes.

Removed the cover, and mix in the eggs being sure to cover all of the green pepper and tomato mix.

Place the cover back on, and allow to cook for 3-4 minutes.

Remove the cover and add the cheese. Then, cover again for 1-2 minutes.

Remove and serve with crusty bread.
