Poached Pear & Blue Cheese Salad
Poached Pear and Blue Cheese Recipe

(Serves About 4)

Ingredients​

4 Ripe Pears
-
1 Bottle Pinot Noir
-
½ Cup Sugar
-
2 Cups Water
-
2 Cinnamon Sticks
-
Assorted Green Leaves
-
½ lb Stilton (or other Blue Cheese)
-
1 Cup Walnuts (Chopped)
-
¼ Cup Extra Virgin Olive Oil
-
1 Clove Garlic (Finely Minced)
-
3 Tablespoons White Wine Vinegar
-
Salt (To taste)
-
Pepper (To taste)

Instructions

To Poach the Pears:
-
Combine the wine, water, cinnamon sticks and sugar in a saucepan large enough to fit the pears.

Bring to a simmer.

Peel the pears (keeping them whole) and place in the pan of simmering wine.

Allow to cook until the pears are soft but not mushy. This should be about 20-25 minutes.

Remove the pears, cover and allow to cool.

Then cut into slices along the length of the pear.

Continue to simmer the wine until it becomes a thick syrup and then place in a bowl or a squirt bottle.
To Make the Vinaigrette:

Place the minced garlic in a bowl.

Add the olive oil and the white wine vinegar and whisk to make a vinaigrette.

Season with salt and pepper.
To Assemble the Salad:
-
Lay the salad leaves on the serving plates.
-
Place a few slices of pear amongst the salad leaves.
-
Crumble blue cheese over the salad.
-
Place some walnuts on the salad.
-
Drizzle the salad with vinaigrette.
-
Drizzle the plate with a little of the wine syrup.
-
Serve.
