Warm Potato Salad
Warm Potato Salad Recipe

(Serves About 4-6)

Ingredients​

3 lbs. New Potatoes (Boiled in Salted Water or Par Boiled and Air Fried)

¼ Stick Unsalted Butter
-
1 Shallot (Finely Minced)
-
1 Clove Garlic (Finely Minced)
-
1 Teaspoon Dijon Mustard
-
1 Teaspoon Red Wine Vinegar
-
¼ Cup Chives (Finely Chopped)*
- ¼ Cup Parsley (Finely Chopped)*
-
½ Teaspoon Kosher Salt
-
½ Teaspoon Ground Black Pepper

*You can add other herbs to this mixture too. I like to include tarragon and dill sometimes.

Instructions

While the potatoes are cooking, bring the butter to a gentle heat in a saucepan.

Add the shallots and season with a pinch of salt and pepper.

Allow the shallots to soften slowly.

Add the garlic and allow to soften slowly.
-
Add the Dijon mustard and combine well.
-
When the potatoes are cooked, drain them and add them to the mixture.

Add the red wine vinegar.
-
Add the chives and parsley (and other herbs).
-
Combine well.

Check for seasoning and add more salt and pepper if you need.
