Warm Potato Salad

This simple but delicious recipe for a warm potato salad can be served with either boiled or fried potatoes. Both are wonderful with it. Seriously, you can’t make enough of them, the dish will be cleared the moment you put it on the table.

Warm Potato Salad Recipe

(Serves About 4-6)

Ingredients​

  • 3 lbs. New Potatoes (Boiled in Salted Water or Par Boiled and Air Fried)

  • ¼ Stick Unsalted Butter

  • 1 Shallot (Finely Minced)

  • 1 Clove Garlic (Finely Minced)

  • 1 Teaspoon Dijon Mustard

  • 1 Teaspoon Red Wine Vinegar

  • ¼ Cup Chives (Finely Chopped)*

  • ¼ Cup Parsley (Finely Chopped)*
  • ½ Teaspoon Kosher Salt

  • ½ Teaspoon Ground Black Pepper

*You can add other herbs to this mixture too. I like to include tarragon and dill sometimes.

Instructions

  1. While the potatoes are cooking, bring the butter to a gentle heat in a saucepan.

  2. Add the shallots and season with a pinch of salt and pepper.

  3. Allow the shallots to soften slowly.

  4. Add the garlic and allow to soften slowly.

  5. Add the Dijon mustard and combine well.

  6. When the potatoes are cooked, drain them and add them to the mixture.

  7. Add the red wine vinegar.

  8. Add the chives and parsley (and other herbs).

  9. Combine well.

  10. Check for seasoning and add more salt and pepper if you need.
